Which CentOS release should you choose?
If you are going to use CentOS today, use CentOS Stream, ideally the version marked as recommended. Each Stream major version is maintained until the end of the full support phase of the matching RHEL version, about five years, and changes continuously throughout. If your application needs a base that only changes when you decide, or a longer lifecycle, AlmaLinux and Rocky Linux are the calmer choice.
CentOS Linux 7, when it appears in the list, is there for one case only: legacy software that requires exactly that system and could not be migrated yet. It no longer gets security fixes, so close everything that does not need to be open in the panel's firewall and plan the migration.

About CentOS
For years CentOS was the free way to run Red Hat Enterprise Linux: CentOS Linux rebuilt each RHEL release after it shipped. That model is over. CentOS Linux has been discontinued, and the last version to be maintained, CentOS Linux 7, no longer gets updates. The project carries on with CentOS Stream, which flipped the position: instead of coming after RHEL, it comes before.
The project itself describes CentOS Stream as a midstream between Fedora and RHEL: a continuously delivered distribution that receives the updates that will make up the next RHEL minor release. It is the choice for people who develop or certify software for the Red Hat ecosystem, who want to see what is coming to RHEL ahead of time, or who want to propose changes that may reach it.
