Which AlmaLinux release should you choose?
With no specific requirement, stay with the newest major version, the one marked as recommended: it is the one that will get updates the longest. Within each major version, minor versions arrive through dnf itself, and each one stops being supported when the next comes out, so keeping the system updated is what keeps the server within support.
An earlier major version makes sense when the software you are installing does not certify the newest one yet; check the vendor's list of supported systems before you order. Each version's end-of-support date is shown in the list.

About AlmaLinux
When the CentOS project turned its focus to CentOS Stream, AlmaLinux took over the role CentOS Linux used to play: a free system, with no subscription, that follows Red Hat Enterprise Linux. It is maintained by the AlmaLinux OS Foundation, a non-profit organisation, and makes a stated commitment: whatever runs on RHEL, from applications to kernel modules, should run on AlmaLinux, and when it does not, the project treats it as a bug.
